Cut and peel green mangoes in halves. Then salt them with Hawaiian salt. Let stand overnight.
Next morning, put them out to dry in the sun for four to five days, or until real dry.
To make mango seed, boil mangoes until soft. Put them in a collander to drain water. Put mangoes in a pot again.
Add 6 cups sugar, 2 tableespoons thick soy sauce, 2 tablespoons five spice and 1/2 bottle red food coloring.
Cook on low fire for about 20 minutes. Put in jars.
